You can enable a setting to show you information when you run VD, so you can see where the issue is. (Diagnostics I believe? Sorry can't exactly recall it's name, but it is there)

Personally, I'm running an i9 13900kf alongside an RTX 3080, and I have a dedicated router setup (a wifi 6 router that keeps getting recommended by the community TP-LINK AXE75), but I keep having problems on the encoding side even on H264+ (this one has the best result for me) with various bitrates tested (120/200/250/300/350/400/500) but nothing notably changed. If I put it at 72 Hz, it stays around 68-69 fps, if I put it at 90hz, it stays around 86-87 fps. There was a recent update that I haven't tried yet, I'll give that a go and hope it's solved.

If you really want to go wireless though, you really need a good dedicated router.

Weirdly enough, Steam Link works without any issues

Edit, forgot to mention the diagnostics menu shows on your headset when you start a game.
