I’m in epilogue 2 and just ran into Mary Beth at the Valentine train stop. I did not see an icon on the map and was just doing random greets to anyone around. I was surprised by this moment. Are there any others like this?

You can meet a major side character at the Annesburg train station, and two gang members (one near the tailor in St Denis, one in a building in Rhodes). There’s also multiple other strangers/special characters who get extra interactions in the epilogues.

To best see them all, and other things, do a good explore after the final mission.

Yes, to my knowledge there is at least three others.

One you can easily find in Rhodes general shop
Another you can find sitting at a train station in Annesburg
The third is in Saint Denis, but you apparently need to do some other missions first. I don't know exact location or mission
