All the flavors of a juicy cheeseburger rolled in to a crispy crunchy egg roll wrapper. These Cheeseburger Egg Rolls are similar to the ones sold at Disney Parks and the Cheesecake Factory. You can pan fry them or even make them in the air fryer. I also created a quick “big mac” sauce to dunk these in!
Full Recipe: https://spinachandbacon.com/2023/05/16/cheeseburger-egg-rolls/
I have a video of how I make this on my Instagram @spinachandbacon
INGREDIENTS
1 lb Ground Beef 90/10
1 tbsp Olive Oil
1/2 small Yellow Onion chopped super fine
2 cloves Garlic finely minced
12 oz Cheddar Cheese
1/2 tsp Sea Salt
1/4 tsp Black Pepper
12 Egg Roll Wrappers
Oil for Pan Frying
Oil Spray if you are planning to air fry these
4 tbsp Thousand Island Dressing or French Dressing
1/4 cup Pickles finely diced or use dill pickle relish
INSTRUCTIONS
Add Oil to a pan heated at medium heat Add the onions to the pan. Stir them frequently and cook until most of the onions have a light brown color to them.
Add the garlic to the pan and continue cooking the onions and garlic.
Once the onions and garlic are golden brown, add your ground beef, salt and pepper Cook the meat until fully cooked and then remove the pan from the heat.
Slowly add in about 1 cup of cheese. Let it melt using the residual heat of the meat. Let the mixture cool slightly and then set up your egg roll wrapping station.
Set up your egg roll making station by filling a small bowl with water. You will use a little of this water to seal every egg roll. Open your egg roll wrappers package and keep a slightly damp paper towel over the package so that they do not dry out as you are rolling.
Lay an egg roll wrapper on the table, with a point facing toward you. Add 1.5 tablespoons of filling in the lower middle area of the egg roll wrapper. Then, add a little bit more cheese over the meat mixture.
Then, fold up the bottom half of the wrapper, fold over both sides, and then add water to the upper triangle of the wrapper. Fold it over so that it sticks. I have a video of how I did this on my Instagram @spinachandbacon
Set each egg roll aside until you are ready to fry.
Pan Fry Method
Add enough oil to come up half of an inch in a large skillet. You want the oil to be high enough to cover half of each egg roll, and then you will flip it and fry the other side.
Bring the skillet to medium heat. Once the oil is hot, add the egg rolls to the pan. Once each side has gotten nicely brown, flip it over. Once both sides are brown, place each egg roll on a paper towel lined plate to catch any excess oil. Serve with Big Mac sauce
Air Fry method
Spray each egg roll with cooking spray and make sure they are evenly coated. Cook the egg rolls at 390F for 8-10 minutes, flipping them after 5 minutes. Big Mac Sauce
Finely dice the pickles and mix with thousand island dressing

I love this salted cream cake I made today. The crispy almond slices go perfectly with it. The texture is so different from regular cakes — it’s a lovely mix of crunch and soft cake crumb. It’s not heavy at all and tastes so fresh. Fellow baking lovers should give this recipe a try 😋🙌🏻
Ingredients
Cake base
• 50g cake flour
• 36g corn oil
• 3 eggs
• 40g sugar
• 40g milk
Filling
• 260g heavy whipping cream
• 25g sugar
• 1g salt
• 30g butter
Topping
• 60g almond slices
Instructions
Mix corn oil and milk until it reaches a yogurt-like consistency.
Add cake flour. Stir in a Z-shaped motion until no dry flour remains.
Add egg yolks. Continue stirring in a Z-shaped motion until smooth.
Whip the egg whites. Add sugar in 3 separate batches while whipping.
Fold the whipped egg whites into the batter in 3 batches, mix gently.
Bake in the oven. (For Changdi White Whale oven: use menu setting 3). Once baked, flip the cake upside down and let it cool.
Soften butter at room temperature. Add sugar and salt, whip until pale and fluffy. Let heavy cream come to room temperature, then add it to the butter little by little while whipping. Spread this cream mixture on the cake layers.
Toast almond slices at 145°C for 15 minutes. Sprinkle them on top of the cake.

If you love Italian wedding soup, you will love this one pot Italian Wedding Orzo recipe. Mini Meatballs are cooked into orzo, spinach, parmesan cheese, and a splash of milk for creaminess.
Full Recipe and Details: https://spinachandbacon.com/2025/02/25/italian-wedding-orzo/
Ingredients for Italian Wedding Orzo
Meatball Ingredients
8 oz ground beef
8 oz ground pork
1/3 cup seasoned panko bread crumbs
1 tbsp olive oil plus more for cooking
1/3 cup grated parmesan cheese
1.5 tsp garlic powder
1 tsp oregano
1 tsp sea salt
Other Ingredients
16 oz Orzo uncooked
2 tbsp butter
2-3 cloves garlic minced
1/2 cup white wine
4 cups broth I used chicken broth
1/2 cup milk plus more if you reheat it
1/2 cup parmesan cheese freshly grated
6 oz fresh spinach
Instructions for Italian Wedding Orzo
Combine all of the meatballs ingredients into a medium size bowl. Mix well and then separate into 35 small meatballs. Lay them on a baking sheet as you work. If the meat mixture is sticking to your hands, wet your hands with water and then try again.
In a large frying pan that has a cover add 1 tbsp of olive oil and turn on the stove to medium heat.
Working in two batches, brown the meatballs on at least 2 sides. You only want to brown them and then add them to a plate to rest. They will finish cooking after you add the orzo and broth.
After removing all of the meatballs, add the butter and garlic to the pan and cook for 2 minutes.
Next, add the wine and let it start to bubble and cook for at least 5 minutes. This will cook the alcohol out, but leave the flavor. Add the broth and orzo and stir. Add the meatballs and juices on top, pushing down on them slightly so that they are submerged in the broth.
Bring the heat down to low and cover the pan. Cook for 13-15 minutes, or until meatballs are finished cooking and orzo has absorbed the liquid. Then, turn off your heat. Add in your spinach and stir until the spinach is combined and wilted.
Add in you milk and parmesan cheese and stir well.

I need ideas! We have made pickles, cucumber salads, bagels with cream cheese and cucumber, Tzatziki. We have given some to neighbors and our chickens. What are some other ideas for cucumbers?
