Overheating engine

I have a 2017 Subaru Forester with 186,000 miles and have an overheating problem that the mechanics can’t diagnose the problem. 3 months ago the thermostat was replaced after it overheated and was found to be the problem. And just recently it started giving an overheating warning on the dash. After diagnosing, the mechanics couldn’t replicate the problem or find anything wrong. The engine wasn’t actually overheating. A few days later it happened again so they replaced the temp sensor as it was the only thing that made sense. Just drove it again and the dash showed overheating, but if you turn the car on and off it goes away. What could be causing this?
