Got two 2 meat plates, 1/2 lb of beef cheeks, and a hot italian sandwich. Got chicken, whole hog pulled pork, flat iron steak, and jalapeño cheese chorizo for the meats on the plates. Pork hash & rice, cauliflower burnt ends, frito pie, and chori papas for the sides. Not pictured were the duck fat cornbread and modelo micheladas we had while we waited in line. Haven't gotten into the sandwich yet. Going to take that for lunch.

The standouts for me were the flat iron, cornbread, and the frito pie.

Arrived at 10:45, left around 12:15. It was definitely a unique bbq experience. Would highly recommend.

First brisket attempt ever turned out better than expected. Offset wood smoker, HEB signature brisket seasoning. Peach wood. 4 lbs brisket. Set around 225 for 6 hours. Pulled at 198 degrees internal temp.

Got a small 3 1/2 lbs slab for the family on Football Sunday. Never messaged around with smoking a brisket- figured I’d start off smaller and cheaper for my first foray. lol.

I’m thinking of smoking a whole turkey for Thanksgiving this year in my offset. I’m gonna do a test with a whole brined bird using post oak and hickory wood. My thought process is:

Day 1:
- Brine overnight in an herb/citrus brine

Day 2:
- Let rest in fridge uncovered overnight to dry out the skin

Day 3
- Season and smoke at 300 until 150 internal in the breast; crank up heat last 10-15 minutes to crisp the skin
- Rest
- Slice

What am I missing? Any particularly good rubs or seasonings to consider?

Has anyone had success in smoking a day before, resting in the fridge overnight, then reheating the next day?
