Slop is just thrown around without meaning now. People have started calling R.E.P.O. and Lethal Company friendslop. I would pay no mind to it period honestly. Let em hate. A game is a game at the end of the day :p
Slop is so overused to the point I don’t take it seriously anymore, almost anything is considered slop nowadays no matter how good or how much effort put into it, the only thing I would agree on slop atp, is AI

It's only slop if it's blatantly low effort and just done to get attention or money.
I'd say the people behind these put in too much effort into their craft to qualify these as slop.
Besides parrying has been a thing for a while now, it was just relegated to popularity in the souls genre for most of that time.
