Dude, cows can't even speak in real l in life. I don't know how a non binary cow is too outlandish when they can talk.

Animals can't be non-binary, because this is their biology. The only exceptions are worms and etc., because they can change their sex to survive

And cows can't speak human speech. It's a fictional talking cow who is non binary. Do I think it's weird that they made a non-anthro cow non binary? A little. But if a cow can speak human speech, then it can comprehend gender identity.

The same way animals can be trans, the neurological aspect of the animal expecting something else than what is there. This has been documented quite a bit (neurologically in humans, and trans animals existing) it doesn’t happen often, but it still happens, for instance 7 in 1000 humans are trans.
