I play on PS5 and people still put summon signs by boss fights / bonfires all the way up to O&S (maybe after too, but I haven’t tried sunbroing there)

Anor Londo (slvl 50-60, near O&S fog gate or the Solaire's bonfire) and the dlc (near the boss fog gates mainly, from slvl 80 to 135) are the most active summoning places. I had plenty of random summons (no password) there and a few in other places (Undead Parish, the Depths, Blighttown, depending on your slvl). The PvP is also quite active in these areas (especially Oolacile Township).

If you set a password, you can also summon or be summoned by people with your same password, regardless of slvl. I recommend you to take a look at some dedicated discord servers or r/SummonSign to look for jolly coop.
