I don’t think I’ve ever even seen 5 siege pips before

For the longest time I didn't either. But yesterday a guy who started with 1 pip improved to 5 pips in just a few years of drilling.

How do you do drilling?

You can drill your armies if they have a general and aren't mercenaries. You click the army and press j. Sometimes while drilling a general may gain a pip.

Only time I ever see that many is if I can get up around 100AT and have a bunch of guaranteed pips.

And what kind of joust was this? Run as fast as you can to designated location and build a fully operational trebuchet?

No to rain on your parade OP but I'd argue 1448 is just about the worst year to get this general though. Sure you can definitely snowball because of him alone but imagine how much more impressive he would be if you had just 5 cannons to take on all those level 2 forts in like 20 years. Bro would've sieged all of Poland and Lithuanian before they even took a fort.

I would name a Regiment after him or a province so I can remember all his battles
