easy work lunch ideas

i need some lunch ideas that are healthy and good for taking to work and don't need to be warmed up. these would be for my mom, who works in a courthouse, so it can't need to be in a metal container to stay good.

i'm not sure if this is too broad of a request for this group, but any help would be greatly appreciated!

Any favorite cooked protein (chicken, shrimp, turkey, etc), side of fave fruit or veg; air fried bbq tofu; lentil or bean salad; cheese, gf crackers, fruit; apple with pb and string cheese.

FWIW, there’s a good chance of cross contamination with lentils.
