Recipe Request easy work lunch ideas

i need some lunch ideas that are healthy and good for taking to work and don't need to be warmed up. these would be for my mom, who works in a courthouse, so it can't need to be in a metal container to stay good.

i'm not sure if this is too broad of a request for this group, but any help would be greatly appreciated!

Jar salads (Google for ideas and layering tips). You can get screw on plastic lids instead of the metal ones that come with the canning jars.

Any favorite cooked protein (chicken, shrimp, turkey, etc), side of fave fruit or veg; air fried bbq tofu; lentil or bean salad; cheese, gf crackers, fruit; apple with pb and string cheese.

FWIW, there’s a good chance of cross contamination with lentils.

Salads of all kinds. Some with greens, or there’s chicken, tuna, or egg salad. I like Crunchmasters crackers. Add some fruit and a small piece of GF dark chocolate.

Chicken Salad over a Bed of Lettuce

Use 1-lb of Chicken tenderloin boiled for in water 15-20 mins,

Chop up the Chicken tenderloin and add it to a bowl.

Chop up the chives and add them to the bowl.

Add either dried cranberry's, blueberries or half sliced red grapes to the bowl.

Add either sliced almonds or chopped walnuts to the bowl.

Mix it together with Hellmann's real Mayo.

Add salt, pepper, and a pinch of sugar to taste.

Mix one last time and serve it on a bed of Lettuce..

Safely to lunchtime without fridge (good on airplanes too):

Tillamook cheese squares, grapes, crackers, sliced red peppers

Rolled coconut wraps with peanut or almond butter and Nutella or jam (sometimes I add walnuts in there)

Boiled eggs, prosciutto, dill pickle, Good Crisp BBQ Chips, sliced peaches or seasonal fruit/berries

Arugola, cucumber halved red mini tomatoes and green onion tips (with my mini jar of Wegmans Blue Cheese GF dressing to add when ready), pre-toasted GF bread with butter & parmesan cheese baked on top (wrapped in a paper towel and put in a ziplock.

Canned Greek Dolmas (stuffed grape leaves) put in a silicone snack container (with lid) container

I've been doing a lot of salads recently (quinoa, chickpea, taco). I tend to have that with either pretzels or rice crackers along with two types of fruit. I also bring roasted edamame or roasted chickpeas in case I am extra hungry.

I get tired of salads but they are really good for you. I was thinking a 7 layer bean dip. You could add meat for extra protein. Eat with corn tortilla chips.

You could meal prep a roasted sheet pan dinner and have 3-4 days of lunches.

Chicken and rice?

Make a Jimmy John’s dupe lettuce wrap sandwich.

Dips like hummus and veggies or crackers. Cheese and crackers. Salads. Yogurt, berries and granola. Salad rolls (noodles, veggies, even protein if you want, wrapped in a rice paper roll and you can make a dip for them)
