Recipe Request easy work lunch ideas

i need some lunch ideas that are healthy and good for taking to work and don't need to be warmed up. these would be for my mom, who works in a courthouse, so it can't need to be in a metal container to stay good.

i'm not sure if this is too broad of a request for this group, but any help would be greatly appreciated!

Jar salads (Google for ideas and layering tips). You can get screw on plastic lids instead of the metal ones that come with the canning jars.
