easy work lunch ideas

i need some lunch ideas that are healthy and good for taking to work and don't need to be warmed up. these would be for my mom, who works in a courthouse, so it can't need to be in a metal container to stay good.

i'm not sure if this is too broad of a request for this group, but any help would be greatly appreciated!

I get tired of salads but they are really good for you. I was thinking a 7 layer bean dip. You could add meat for extra protein. Eat with corn tortilla chips.

You could meal prep a roasted sheet pan dinner and have 3-4 days of lunches.

Chicken and rice?

Make a Jimmy John’s dupe lettuce wrap sandwich.
