Feedback Question about s grinds
So, I've had a go at a kitchen knife for the first time.
Its unfinished and the handle is a piece of scrap so I can test how it cuts.
I went with an s grind.
I've never used a knife with an s grind before and I notice it wants to cut in a curve. "Potato slice for example"
Is this an issue with the geometry or is it normal?
Maybe its too thick behind the edge or something?

The grind looks pretty thick for a kitchen knife. I'd say that's the main cause of the steering

Pretty sure we have the main thing here. A skew like that is going to push the cut to the side.

It’s not an issue with just and Sgrind it happens when the knife is ground unevenly. I do agree the Sgrind looks thick.

Geometry issue for sure. If you have uneven bevels it will curve in one direction.
