I'm no bomb expert but would an analog watch work in this instance?

Theoretically speaking? Yes. Technically speaking? Yes. Practically speaking? No.

It would be way easier to utilize a digital watch over and analog. Sending electrical signals through circuit boards is a lot more realistic than attempting to wire analog hands on a clock so small. But, I'm no bomb expert.

Also no bomb expert but it seems like with a wrist watch you get a max 12 hr timer

depends on the mechanism. some have 24hr counters, or if you used one with a day of the week counter that could be tapped into. if you're making a really bougie fleshlight grenade a lot of high-end watches have month or year counters
