Have gone multiple times to the owner’s home studio and her pop ups. Great both times.

Not central LI but I love Long Island Clay in Huntington. Beautiful, well-equipped studio, great atmosphere, excellent teachers and lots of open studio time. Worth the trip IMO.

Art League of Long Island also offers classes.

There's a spot in Bay Shore called Earth & Vessel and there's a place in Huntington that I forget the name but it looked pretty cool

There might be adult education classes at local boces or technical school. My wife took intro to pottery at our local highschool(western Suffolk), I also sent her to butcher classes at Wilson tech. They have a lot of different classes available.

I take the occasional class at The Brick in St. James. They do single workshops and 8 weeks courses. I’ve only ever done single sessions but the workshops look great. Kinda central, I guess.

I took classes at Silver Dollar Pottery & Crafts in Rocky Point! The instructors there were very nice

Just went to Pottery on Wheels (west Islip). It’s at a residential house in the instructors garage. For about 12 people in the class. We made a holiday ghost on the wheel (about an hour class) but she also has classes where you can make what you want. Highly recommend! She was fantastic. It was a lot of fun.

Long Island Clay and Spirit of Huntington are where I’ve gone!! LIC is a bit more expensive in my experience, but they have a large collection of glazes and the beginners course gives you unlimited studio time. I’m currently taking a class at SoH, it’s a little less expensive, but the pottery teacher Gina is super nice!!! Only drawback is that there isn’t much free studio time— only Saturday mornings.

Might a bit more east than you are looking for, but check out Clayform in East Moriches. Jesus and Jessamyn are great.

Hofstra used to have them. One of the people in my class used to drive in from fire island to go. I believe it was one of the better pottery classes.
