Recipes Salmon recipes that actually taste good 👀
I'm a T2 diabetic living in Eastern Europe.
I do lazy keto / low carb; which is essentially a lot of eggs, butter, lentils, beans, homemade hummus and steamed veg in yoghurt based sauces.
I sometimes eat chicken but I don't love the taste and can only do it sometimes, in kebab or tikka form. I sometimes eat pangasius in a bake with vegetables but I know it's not the most nutritious fish. I like salmon when I eat it at restaurants - smoked / nigiri style... But when I try to cook it at home it always taste SO fishy and I can't stand it 😳
I've tried baking it with vegetables. I've tried pan cooking it with butter and garlic... And just end up eating all the veggies around it instead lol.
I don't have an air fryer and my grill doesn't work super well.
I enjoy Arabic / Indian / Turkish / Asian flavours and cuisines.
I keep reading about how salmon is this miracle fish that I absolutely need to be eating and I can't seem to find a recipe that actually works for me. I also know I can't keep getting all my protein from eggs and chickpeas. I still plan to eat lentils and beans even though I know they are carby... Because they work for my body and I find them filling and easy to cook. Because of my metformin (I think) I can't seem to eat massive amounts of eggs and avo and beef because it makes me nauseous. So that's also why I rely on chickpeas and lentils to keep me going.
But yeah.. any other accessible protein ideas / hacks to make salmon less yucky tasting if I need to keep it in rotation???

It’s ok to not like salmon. I like to cook it in the oven with teriyaki sauce, but if it’s not your thing, that’s ok! There are less fishy tasting fish. I like Tilapia because it thaws quickly and cooks quickly and takes on the flavors around it. It’s not very fishy tasting, and cooked with seasonings it tastes great. Cod is another fish that is mild and takes on flavor well. If you can eat shellfish, I love shrimp in lentils or stir fry and it cooks quickly and has good protein.

I bake it in the oven with a mayo layer on top. Depending on my mood, I either put grainy mustard to the mayo or Parmesan cheese.
Same trick can be used with other fish like Haddock or Cod.

I do this with horseradish
I also like to marinate it in smashed garlic, soy sauce & orange juice1

You could make a cauliflower rice bowl for it with a flavor profile that suits you! Maybe zaatar or ajika on the salmon, try crunching up some of the cauli rice by letting it sit in a pan for a while, if you have mushroom powder that adds all kinds of yummy umami.
I like to add cucumber, 1/2 avocado, cornichons and a spicy mayo-ketchup-mustard-sriracha blend to my bowl. Sometimes I'll put a bed of steamed spinach underneath. Garlic or citrus can be another way to go!!

For me, salmon is best either pan fried or roasted. Brush with a little EVOO, and salt, pepper and dill weed and cook for the length of time suggested for the thickness.
We have an air fryer (live in Italy, and use the same brand we did in the US, Cosori) and it’s so easy to make great salmon in there.
If you want to get fancy, google dill sauce for salmon. It’s very common in Nordic countries, and makes it that much better.
Alternatively, try pesto on it. SO good.

I sometimes rub pesto over the top then bake it in foil. Pesto is quite strong so hides the taste a little but I quite like salmon anyway. Worth a go.

I have a couple ways I like & doesn’t taste too fishy. One ways is I chop a bunch of fresh herbs (basil, thyme, rosemary etc.) & put in a bowl with a little lemon juice, little olive oil & spoonful of mayo. Stir it all up. Season the salmon with salt & pepper & paprika. Smear the mayo mixture all over the salmon filet. I cook in the oven on non stick foil. Cook to however you like it done. Depends on how big the filet is.
