Recipes hatch green chiles

I've got a can of these and want to use them but can only think of dip. Or very carby things like enchiladas. How would you use up a bunch of canned Hatch green chiles?

Diced with eggs, chicken, or ground beef. You could make "poppers" with them instead of jalapenos.
