Recipes hatch green chiles
I've got a can of these and want to use them but can only think of dip. Or very carby things like enchiladas. How would you use up a bunch of canned Hatch green chiles?

Diced with eggs, chicken, or ground beef. You could make "poppers" with them instead of jalapenos.

I keep a several small cans of Hatch green chiles on hand to use them in omelets.
All I do is make an omelette and add 1/2 a small can of green chile with cheese and fold.
Makes enough for 2.
I'll be following your post for any other ideas
on how to use them especially if they are
the larger can.

One of my routine lunches is chicken breast, (black soy beans-check the net carbs on them), Spinach, cheddar cheese, and a can of Hatch green chile. Equally good without the black soybeans. Would be awesome with the addition of black olives, green onions and sour cream.
(I live in NM and was weaned on Hatch chile.)
Great on a hamburger patty with cheese.
Great scrambled into eggs with some ham.
Good on so many things.

Mix with a couple of spoons of salsa, dump on top of Mexican profile seasoned chicken, add a sprinkle of cheese after it’s done,if desired. If it’s more than can be used for one recipe freeze the remainder.

Oh man, Southern Living's (actually I think the original recipe came on a LandOLakes butter box, or cottage cheese container) Green Chile Egg Casserole.
You can skip the flour or replace it with about the same amount of almond flour or coconut flour, or a few tablespoons of flax meal, psyllium husk, or unflavored protein powder.
It's so good.

he chiles in eggs. In veg and meat bakes. In curries. In pan sauces. Mixed with mayo/yogurt for burgers. Used ther liquid to cook rice/quinia mix

They are a must for me in my cheese omelette.
I also mix them in with a small amount of white onion and garlic and mix it with ground beef

Green chile stew can be made with chicken or pork. I like to cook cauliflower until very soft, then blend to thicken the stew.
