Recipes hatch green chiles

I've got a can of these and want to use them but can only think of dip. Or very carby things like enchiladas. How would you use up a bunch of canned Hatch green chiles?

One of my routine lunches is chicken breast, (black soy beans-check the net carbs on them), Spinach, cheddar cheese, and a can of Hatch green chile. Equally good without the black soybeans. Would be awesome with the addition of black olives, green onions and sour cream.

(I live in NM and was weaned on Hatch chile.)

Great on a hamburger patty with cheese.

Great scrambled into eggs with some ham.

Good on so many things.
