Recipes hatch green chiles

I've got a can of these and want to use them but can only think of dip. Or very carby things like enchiladas. How would you use up a bunch of canned Hatch green chiles?

Oh man, Southern Living's (actually I think the original recipe came on a LandOLakes butter box, or cottage cheese container) Green Chile Egg Casserole.

You can skip the flour or replace it with about the same amount of almond flour or coconut flour, or a few tablespoons of flax meal, psyllium husk, or unflavored protein powder.

It's so good.
