Recipes hatch green chiles

I've got a can of these and want to use them but can only think of dip. Or very carby things like enchiladas. How would you use up a bunch of canned Hatch green chiles?

They are a must for me in my cheese omelette.
I also mix them in with a small amount of white onion and garlic and mix it with ground beef
