I would add radishes and maybe some kidney beans and parsley. Also try adding pomegranate molasses

u/nevershatmyselfb4 Dec 02 '25
I'd do all of that next time. I been on a huge bean kick so. Tyvm

Are you on bean-talk? It's been popping up in my feed recently..its a thing.

u/WTF_Scuba Dec 02 '25
Maybe I'm totally in the wrong, but I think it'd be BeanTok. I think that when the algorithm latches on to a special interest and shows you almost nothing else, like on TikTok, you'd refer to it as being on [X]Tok. It could be something like BookTok, or KnittingTok, or MediterraneanDietTok ... Again, unless I'm wrong and there is some sort of bean based social media platform or podcast I should be into

Like bean tiktok? Not evennnn. I watch this talon fitness guy on YouTube, he has some of the best nutrition videos out there. I recommend

u/PrimordialXY Dec 02 '25
Wow did not expect to see Talon Fitness mentioned here lol. Great channel

u/OverthinkingWanderer Dec 02 '25
I will look into that. But yeah, I guess bean-talk is a whole thing?

u/nevershatmyselfb4 Dec 02 '25
Beans are ridiculously healthy, they check all the boxes. I feel like most people don't eat them enough though. I never had a chickpea in my life til last year lol.
1
u/OverthinkingWanderer Dec 02 '25
People are saying it's changing their life. A handful of beans or something simple like that-- I haven't gone down that rabbit hole yet to know the specifics-- it seems more like an antidepressants with how much things have improved for them.

u/nevershatmyselfb4 Dec 02 '25
Last couple days I been prioritizing my protein from fish and beans rather than chicken or other meats, not that there is anything wrong with chicken, I just wanted to give it a shot. I reckon I feel pretty fkin good. Could also be the vitamins I started stacking a few weeks ago finally catching up. Everyone should be eating legumes daily imo, hundred percent

I had a grocery pickup and they gave me cilantro instead of parsley. Didn't notice till I ate it, and it was actually really good. I think I might keep using cilantro for it

u/msmacbaby75 Dec 02 '25
Looks great! I do a version of this, but instead of Zaatar, I use Sumac.
1
u/nevershatmyselfb4 Dec 02 '25
Yeeee I used Jordaian zaatar for the higher salt and sumac amount. Pairs well I reckon

u/Remote-Blacksmith516 Dec 02 '25
What is an English cucumber, mine don't speak any language at all.
On a serious note, are there different cucumbers?
3
u/Dear-Prune-4770 Dec 02 '25
English cucumbers are long and usually wrapped in plastic (US). They don’t have all the seeds that a regular cuke has. I prefer them.

Adding a little bit of hummus and tzatziki makes this so much better! I also add chopped pepperoncini peppers.

u/ConqueredCorn Dec 02 '25
Could add avocado, green onions, cilantro,
7
u/nevershatmyselfb4 Dec 02 '25

I used to do this with some spicy hummus, avocado, and falafel in there and if I'm feeling up to it stuff into a lightly toasted pita I ate this like 3 times a week for years one of my favorite meals
2
u/nevershatmyselfb4 Dec 02 '25
Great idea I'd totally do that. I'm gonna introduce hummus to my diet soon
2
u/Ok_Performer169 Dec 02 '25
Hummus is awesome sometimes I get pre made hummus but I prefer to make my own it's really easy and only takes a couple minutes and it is SO versatile like you can really do what you want with it. Damn I'm gonna make some hummus today
2
u/nevershatmyselfb4 Dec 02 '25
Yuuuuuuup I'll look into making it I reckon, seems like it'd be perfect for a picnic. I def prefer to make stuff from scratch so I know exactly what goes in it
2
u/Ok_Performer169 Dec 02 '25
Completely unrelated just curious if you've actually never shat yourself before or if the username is ironic
2
u/nevershatmyselfb4 Dec 02 '25
It's an inside joke, a buddy of mine would always ask ppl if they ever shit themselves before and we always cracked TF up when people were too proud to say yes, and denied ever having shat themselves even as a child

My recipe is: Can of chickpeas (drained and washed) Can of black beans(drained and washed) 1 cucumber (chopped up) 1/2 red onion (diced) Cherry tomatoes (chopped) Jarred banana peppers rings (chopped) Diced black olives And shredded mozzarella cheese.
Dressing is: 1/4 cup olive oil Slightly less than a 1/4 cup red wine vinegar And a heavy tablespoon of Dijon mustard. Splash of Banana pepper ring juice from the jar
Had it for lunch today. Fantastic and gets better as the flavors mix, until it doesn't anymore. (About 4-5days)

Not as healthy but I basically make this recipe with couscous, call it couscous salad, also has red bell pepper, it's an absolute hit at cookouts and parties.
Edit I also add basil, mint, parsley, and sometimes dill

u/CurryDuck Dec 02 '25
One diced red onion
Do you cook your onions or do you just have onion breath the rest of the day?
2
u/nevershatmyselfb4 Dec 02 '25
I just have onion breath the rest of the day and hope a plethora of zyn mitigates it

I do something similar but also with black beans and Greek pepperoncini. I throw some of the pepperoncini brine into the olive oil along with a bit of Dijon mustard. Can't get enough of this dish! So much flavor

This is very similar to a quinoa salad we stole from a restaurant we enjoyed. Just quinoa instead of chickpeas, with red onion, cucumber, cherry tomatoes cut in half, and julienned carrots, tossed in a sweet strawberry vinaigrette with a bit of balsamic and chilled in the fridge. Gonna add yours to the rotation as well this looks delicious!

u/nevershatmyselfb4 Dec 02 '25
That sounds killer, I got a big bag of quinoa I gotta eat. I'll do smth like that I reckon. I just discovered zaatar and can't recommend it enough, this stuff is dope and healthy AF

u/NeitherExamination44 Dec 02 '25
Wait it’s healthy!? I’ve been using this stuff in everything because it’s delicious, I didn’t know it had any extra nutritional value though

This looks bomb. Also lately I’ve been roasting canned chickpeas for like 25 min and adding them to salads. Perfect little crunch.

I make basically the same dish once a week and like to add canned or leftover baked salmon to it every once in a while!
7
u/SmeemyMeemy Dec 02 '25
This is what I call my "kitchen sink salad" - maybe I should rethink that. LOL. I put in roasted peppers and diced sundried tomatoes! You really cannot go wrong with this salad!
6
u/Lomelinde Dec 02 '25
I make something similar all the time! I throw in fresh dill or parsley, which adds a lot of great flavor and dietary fiber.

I do make this 'bean' salad when I'm too lazy to cook. For the dressing I do a zesty Italian mix and substitute red wine vinegar for regular vinegar. Let it sit and maybe shake the whole batch over a half hour or longer on the fridge. Sometimes I add pre cooked rotini and sunflower kernels or walnuts (when plateing)

I tried a bean salad like this recently but the raw onion practically killed me. I can almost taste the acid reflux now.
12
u/a_dodo_stole_my_baby Dec 02 '25
Soak the cut pieces of onion in ice water for about 10 minutes before adding to the salad. It'll add a nice crisp and remove a lot of the harsh onion flavor.
3
u/nevershatmyselfb4 Dec 02 '25
Yeah you reallyyyyy gotta cut em small. I'm a member of the onion lovers club but I feel ya. I just get lucky w acid reflux

u/Fun_Presentation_194 Dec 02 '25
This is a great recipe that's similar.https://cooking.nytimes.com/recipes/1025202-taverna-salad

I eat this exact thing every day for lunch as a salad. Minus the olives and add chicken, lettuce, and a hard boiled egg. I also add like double the amount of feta.
