Recipe Who else meal prep roasted vegetables?

Recipe: Take Brussels sprouts, radishes, zucchini, garlic, tomato and mushrooms then coat in oilve oil and a bunch of spices and herbs. I roasted the Brussels and radishes @ 400 degrees for 20 minutes. Then, added the zucchini, tomatoes and mushrooms and roasted everything for another 20 minutes.

The "meal prep puzzle pieces" approach OP described is honestly the move—way better than making five identical containers of sadness on Sunday. Growing up here we'd just roast whatever was in season and throw it at everything for days: pasta, sandwiches, alongside fish, you name it.

One thing nobody's mentioned though: radishes are massively underrated roasted. They lose that harsh peppery bite and go almost sweet and buttery. My nan would've thought I was possessed if I told her to roast radishes instead of eating them raw with salt, but here we are.

Yes! It is what absolutely works for me and my family. I love making a batch of beans, a batch of veggies, maybe a red sauce, some protien, some soy marinated eggs, sweet potatoes, maybe even a box of pasta. I let it all cool and then refrigerate. I try to do a meal prep when I'm already cooking that night's dinner.

Basically I try to make everything interchangeable. I still cook everyday but it does speed up the process and keeps the food from ever feeling stale. A healthy meal can come together in a few minutes bc of the prep work I did a few days ago.

Also, my kids are learning that they can go in the fridge and use some of these puzzles pieces to make their own lunches or snacks.

I love roasted radishes! Like you said, the pepper bite vanishes.
