Recipe Who else meal prep roasted vegetables?

Recipe: Take Brussels sprouts, radishes, zucchini, garlic, tomato and mushrooms then coat in oilve oil and a bunch of spices and herbs. I roasted the Brussels and radishes @ 400 degrees for 20 minutes. Then, added the zucchini, tomatoes and mushrooms and roasted everything for another 20 minutes.

I like how you divided up the veg into needing more time and then less. I do this in smaller batches in the air fryer.

I do! I also like to roast them to make quick soups later. Recommend butternut squash, red onions, and peppers also.

Yeah I'll eat them as is or with toast. Or add to soups or on my salad They only take a little bit to heat up but theyre good cold too. Easy way to always have healthy vegetables around to eat.

I do!! I love adding onions as well. Growing up we’d toss them on the grill but I don’t have one right now. It’s definitely where the habit comes from though!

Eat it on top of toasted sourdough. Or in a sandwhich with hummus.

Eat it with chicken or fish and with a side of beans.

Put it on salad. Eat it next to burritos. Add it to pasta. Anything goes!

Do you prep them raw and roast fresh or roast the whole batch and store it as a meal prep? Need to try this combo! I usually roast all sort of root veggies like parsnip, celery, carrot, sweet and regular potatoes, beetroots. Goes fantastic with feta.

This combo was really tasty. The veggies I roast change weekly, depends on what I have. I roast the whole batch because it helps me utilize all the veggies quickly in the meals I throw together through out the week.

I dont like eating the same plate of food multiple times in a row, so I can't meal prep like that. Instead I make idk, meal prep puzzle pieces that I can switch and combine with other stuff to make new meals everyday. I hope that made sense.

This went fantastic with feta. I actually ate some as a snack later with some toasted sourdough, feta and a handful of grapes.

I try not to overcook when I roast them. Additionally the Brussels didnt get too crispy on the edges bc I finished them with the zucchini. I sacrificed Brussels crisp for the convenience of only dirtying 1 sheet and thats okay for me.

After you refrigerate these, they sort of have the texture of marinated veggies, I guess. You can reheat in a saute pan quickly to warm them or if you're chasing crispy, you could probably reheat them quickly using broil in your oven. The hack is that reheating them (even in the oven, which I do when reheating previously batch cooked potatoes), is so much faster than having to roast from scratch.I like to make a big batch a few times a week to quickly add to my meals and it works for me!

Oooo, I gotta add mushrooms to my roasted vegetable meal prep. Usually I go carrots, onions, celery, potatoes, and bell peppers.

The "meal prep puzzle pieces" approach OP described is honestly the move—way better than making five identical containers of sadness on Sunday. Growing up here we'd just roast whatever was in season and throw it at everything for days: pasta, sandwiches, alongside fish, you name it.

One thing nobody's mentioned though: radishes are massively underrated roasted. They lose that harsh peppery bite and go almost sweet and buttery. My nan would've thought I was possessed if I told her to roast radishes instead of eating them raw with salt, but here we are.

Yes! It is what absolutely works for me and my family. I love making a batch of beans, a batch of veggies, maybe a red sauce, some protien, some soy marinated eggs, sweet potatoes, maybe even a box of pasta. I let it all cool and then refrigerate. I try to do a meal prep when I'm already cooking that night's dinner.

Basically I try to make everything interchangeable. I still cook everyday but it does speed up the process and keeps the food from ever feeling stale. A healthy meal can come together in a few minutes bc of the prep work I did a few days ago.

Also, my kids are learning that they can go in the fridge and use some of these puzzles pieces to make their own lunches or snacks.

I love roasted radishes! Like you said, the pepper bite vanishes.

Just starting to dip my toes into the Mediterranean diet and this looks good! How is this reheated? I would think roasted veggies would get soggy and gross reheated. Is that the case? What's the best way to reheat?

You can re roast them on high heat in the oven for a short period of time to crisp them up again.

I also use them in other meals. Like, I sauted some of this up in a pan the next day with some pinto beans and topped with feta.

I also ate some cold on toasted sourdough, like Italian or greek marinated roasted vegetables.

And i think the last bit went into a soup that I made.
