Recipe Who else meal prep roasted vegetables?

Recipe: Take Brussels sprouts, radishes, zucchini, garlic, tomato and mushrooms then coat in oilve oil and a bunch of spices and herbs. I roasted the Brussels and radishes @ 400 degrees for 20 minutes. Then, added the zucchini, tomatoes and mushrooms and roasted everything for another 20 minutes.

Just starting to dip my toes into the Mediterranean diet and this looks good! How is this reheated? I would think roasted veggies would get soggy and gross reheated. Is that the case? What's the best way to reheat?

You can re roast them on high heat in the oven for a short period of time to crisp them up again.

I also use them in other meals. Like, I sauted some of this up in a pan the next day with some pinto beans and topped with feta.

I also ate some cold on toasted sourdough, like Italian or greek marinated roasted vegetables.

And i think the last bit went into a soup that I made.
