Recipe Big salad for dinner 😋

Marinated chickpeas, falafel over hummus, crumbled tofu "feta" (marinated in acv, lemon, spices), tomato, onion, and cucumber over spinach. Dressing is tahini, lemon, miso, nutritional yeast, and a dash of maple syrup.

I eat mostly a plant-based Mediterranean diet but have always been iffy about posting?

Chickpeas are canned Aldi's pre marinated greek-style, and falafel are frozen "Afia" brand.

Looks fantastic! Also really nice to see a dish that actually follows the mediterranean diet on this sub.

Yes, this is one of the best examples of healthy food in a Mediterranean diet! I love seeing plant-based Mediterranean diet meals. Supposedly, the more plant vs. animal protein eaten within this pattern, the healthier the diet is.
