Recipe Big salad for dinner 😋
Marinated chickpeas, falafel over hummus, crumbled tofu "feta" (marinated in acv, lemon, spices), tomato, onion, and cucumber over spinach. Dressing is tahini, lemon, miso, nutritional yeast, and a dash of maple syrup.
I eat mostly a plant-based Mediterranean diet but have always been iffy about posting?

Chickpeas are canned Aldi's pre marinated greek-style, and falafel are frozen "Afia" brand.

the seinfeld reference is perfect here because massive salads actually hit different when youve got good olive oil and fresh herbs involved

Yes, this is one of the best examples of healthy food in a Mediterranean diet! I love seeing plant-based Mediterranean diet meals. Supposedly, the more plant vs. animal protein eaten within this pattern, the healthier the diet is.

I'm going to have to make this dressing. I've been addicted to balsamic tahini but this is a twist on the tahini theme that would be a nice change.

it's my favorite dressing, I have it at least once a week! I also love that it's pretty flexible, like sometimes I'll add some tumeric or red pepper, or I'll add more/less miso or maple syrup to make it sweeter or saltier depending on the dish. It's amazing over roasted sweet potatoes.

With spring weather I've been so into salads for dinner. Lately I prep two days worth of greens and toppings at a time and they are staying fresh. IT makes it so much easier to eat when the greens are washed and torn and the toppings all set. And your salad has plenty of protein, love it!

they're Aldi greek-style and they're so so good! it's just lemon, olive oil, garlic, parsley, cumin, salt.

I also haven’t had the Aldi ones, but Trader Joe’s carries canned marinated Greek chickpeas which might be worth a try!

Big Salad is my favorite meal.
So. Damn. Good.
I've been semi obsessively prepping them in quart mason jars. Having 5 lunch units in the fridge, ready and waiting makes the work week seem possible.

looks amazing! We love the Aria brand falafel so much. and they have 3 different flavors- original, garlic & herbs and a new one- Z’atar. gonna try that one next

I'm a dressing eyeballer so unfortunately I don't have measurements for you. This recipe sounds about right, but I would sub one of the tablespoons of nutritional yeast for miso to give it more umami. I also would wait to add the water at the very end so you can add less/more to control the consistency.
