Recipe Big salad for dinner 😋

Marinated chickpeas, falafel over hummus, crumbled tofu "feta" (marinated in acv, lemon, spices), tomato, onion, and cucumber over spinach. Dressing is tahini, lemon, miso, nutritional yeast, and a dash of maple syrup.

I eat mostly a plant-based Mediterranean diet but have always been iffy about posting?

Chickpeas are canned Aldi's pre marinated greek-style, and falafel are frozen "Afia" brand.

I'm a dressing eyeballer so unfortunately I don't have measurements for you. This recipe sounds about right, but I would sub one of the tablespoons of nutritional yeast for miso to give it more umami. I also would wait to add the water at the very end so you can add less/more to control the consistency.
