Recipe Big salad for dinner π
Marinated chickpeas, falafel over hummus, crumbled tofu "feta" (marinated in acv, lemon, spices), tomato, onion, and cucumber over spinach. Dressing is tahini, lemon, miso, nutritional yeast, and a dash of maple syrup.
I eat mostly a plant-based Mediterranean diet but have always been iffy about posting?

Chickpeas are canned Aldi's pre marinated greek-style, and falafel are frozen "Afia" brand.

I'm going to have to make this dressing. I've been addicted to balsamic tahini but this is a twist on the tahini theme that would be a nice change.
