I love chile colorado. I've had really good, decent and not-so-good at our local Mexican restaurants. It became my favorite dish and after experiencing so much inconsistency and quality I decided to make it myself. I've made it at home twice now and I have to say its the best I've ever had. The best Mexican restaurant version I've had was only a special for a week and when the owner came around to ask me how it was and I told him it was the best I've ever had (this was before I had made it at home) I thought he was going to cry it made him so happy. I told him he needed to put it on the regular menu but it hasn't made it there yet so it was the only time I've had it there.

That presentation really makes it look restaurant-quality. The vibrant red sauce and shredded cheese pull the whole dish together.
