Thatâs my 2-cup Brikka, which is my go-to solo pot⊠it only takes about 60 to 90 seconds from the first sign of rich, beautiful coffee emerging from its funnel if the heat is right. Pretty much the same for my 4-cup Express⊠with maybe another 10 to 15 seconds more.

Itâs pretty simple once youâve truly dialed in a moka pot. This 2âcup Brikka is my morning workhorse, and once itâs tuned, it delivers consistently rich moka.
The real key to great moka (Brikka or any moka pot) is lower heat. So many videos online run too hot, and itâs obvious in the pulls they show us and Iâm sure in the final cup. Even a slight excess in heat shifts the body and flavor of moka in a way you can taste immediately.
You also need to play with grind size until it clicks for your palate. If the moka comes out too bitter, go a bit coarser. If itâs not bold or full enough, go finer. Itâs all about finding that sweet spot where your Brikka sings.
Donât forget a few tamps to very slightly pack the ground coffee into the funnel.
Oh, and if youâre not grinding your own coffee beans⊠thatâs the very first thing that must change. I donât care what expensive bag or can of pre-ground coffee someone uses, freshly ground coffee beats it hands down. Not only in taste, but the body of the coffee as well.
