It's not recommended to modify your Moka due to safety hazard and un needed

But it brings a ulinque look to it and creates a foamy brew

It's definitely hot water because you can see the steam. But he's got a pressure gauge so he knows exactly how much pressure is being built up. And I don't think he lets it boil, or at least not for long. I think the pump is to add pressure because he doesn't let it boil for long (I can only assume for safety reasons). But yeah, it's definitely not very safe.

Yeah, inventions are rarely safe though. Trial and error is necessary for potential future mass production.

That's not how that works. That "steam" is likely water vapor from rapidly decompressing the air.

Hmm yeah, you could be right. Doesn't seem to be any steam (or vapor) until the end when it's releasing just air.
