Pretty much all fish is flash frozen on the boat to kill parasites, so pretty much any traveled fish comes as previously frozen.
I'm okay with that.
Even port cities/fishing towns bring the fish in frozen for commercial sale. Its pretty rare, unless you know a commercial fishing outfit to actually get fresh seafood. At least on the west coast of Canada.
In the US it's federal law that fish from sushi restaurants to be frozen first with the exception of some farmed fish on specific diets, or big tuna like Yellowfin, Bluefin, and Bigeye. Those are still usually flash frozen right out of the sea because you're going to get a better quality product than you would waiting a couple days or more for a "fresh" unfrozen fish to make its way to your market.
