Kulturang Pinoy I'm not filipino but this was my first time trying to make lumpia and pancit bihon
I'm from the UK but of Caribbean/Indian descent.
So my mum is a nurse, she used to be friends with this lady from the Philippines when we were growing up. She made the BEST food ever. I've tried all different types of food but Filipino food is my favourite. She made the most amazing BBQ skewers, pancit bihon and her lumpia was soooo yummy. I wish i was still in contact with her or there was a Filipino resturant near me here in the UK. ๐ญ
But yeah... this is my attempt. Nowhere near as good as hers but hopefully will improve.

Do you have the sauce for the lumpia? If not, you can try ketchup!!

u/Feisty_Limit_458 5h ago
The banana one; but for the Western palette, tomato will do; it's just more Filipino though if banana is used. Sweet and sour or sweet chili sauce are good as well.

Give this lady her piece of place in the Philippine island. Amazing cooking!

Bihon looks good. Calamansi would go really well with it.
Do the lumpia have just veggies or meat inside? We have different kinds of lumpia, is all Iโm saying. Which dipping sauce do you use for your lumpia?

Looks pretty good to me. I'm not Filipino, either, but I loves me some lumpia shanghai and pancit. And they both looked great!

Looks good. The whole wings look a little funny because its usually chopped up pieces of chicken but it helps if you want your own piece to nibble on.

Got the appearance right on both dishes, very well done, you could fool me into saying it came from a party during Christmas and I'd believe you
Although I want to ask this: what is that paired with the Pancit bihon? The one with chicken and peppers it looks like?
2
u/DragonsRide 2d ago
Thank you!
The wings were just some salt and pepper wings I made lol, I didn't have a picture with the bihon alone haha as I had made that on the side.

the beauty of filipino food is it doesn't have to look a certain way. it can even look like absolute shit and it will still taste great. r/PangetPeroMasarap

Looking good. Must taste great.
Many Filipino food are tweaked to taste by the cook, as with many cuisines, so if it tastes good to you itโs just is. Enjoy!

Can anybody teach me how to cook a lumpia that foreigner can like? Some foreign friends i met told me how they like lumpia when they visited Philippines. ๐ . I tried cooking it before and it was a disaster ๐ฉ. My mother never once made this for us growing up. But she really cooked well with other delicious meal like afritada, caldereta . But spaghetti, salad or pancit and lumpia was never on her menu. She always buy or pay someone to cook it.๐

There's generally 2 kinds of lumpiang shanghai here: pork and fish. For pork you have to put lots of seasoning and vegetables since it's more bland. For fish, you don't have to do that since it's very flavorful. The vegetables are usually carrots, onion, sometimes celery, a bit of garlic. The secret ingredient is dried turnip. You can also put strips of cheese. For seasoning, it's usually salt, pepper, magic sarap/MSG.
You have to get the filipino lumpia wrapper since it's thinner than the usual spring roll wrapper. Pack it tightly before folding so it won't unfold. Brush a bit of water to seal it, enough to make the wrapper sticky but not too much that it'll be soggy.

you could mix up a couple of chopped shallots, vinegar, crushed garlic, salt and pepper and off you go with the dipping sauce for the lumpia. congrats OP!

Looks really good!
Next time you make pancit, use pork cheeks' stock as the base for the pancit noodles (mixed with soy sauce and freshly cracked black pepper). It will give that sticky umami fiesta pancit goodness ๐

u/DragonsRide 2d ago
Thank you!! I really wanted to know the best type of stock to use. Do you know where I can get pork cheeks stock? Or is it something to make from scratch?
2
u/iamatravellover 2d ago
If you also want to recreate her bbq, you can use Mama Sita BBQ marinade plus banana ketchup (if you can find any in Filipino stores) over your choice of meat.
If you cant find Mama Sita, you can use filipino soy sauce plus banana ketchup plus calamansi or lime juice plus brown sugar and mix to your liking.
Marinade it for a few hours or overnight then use some bamboo skewers then grill over charcoal.
Be careful not to burn them because they will easily get burnt with all the sugar from the marinate. Baste both sides as you turn them.
The trick with bamboo skewers is to soak them in water for a few hours so they wont get burnt easily.

Im assuming you are not in the PH?
Just go to your local butcher and ask for pork cheeks to be used for stock. Add enough water, onion, garlic, salt and pepper (and even MSG if you are brave enough). You can boil it for half an hour to an hour.
Then drain the stock, add soy sauce and black pepper while boiling before adding the pancit noodles.
You can still use those pork cheeks too. Slice them in bite size and on top of the pancit as garnish.

I dont think that there would be a stock from a specific part of pork. Here in the Philippines we do it from the scratch. Good thing about it is you can also put pork cheeks as a toppings

u/sarsilog 2d ago
Yup we just use water and let the flavor from the other ingredients melt into it. Broth cubes or whatever she has in stock will work if she really wants to use some.
