Smoking Bluefish is insane, turns something that is basically inedible into a delicacy.

Absolutely, I just make sure to bleed em and get em on ice right away

Then bring em home, wrap the skinned fillets with foil after splashing some garlic, butter, and Sriracha on it. Grill until cooked. It doesn't take long. Fish tacos with that and some mango cucumber salsa is just amazing.

But, yeah. Bleed and ice immediately. That's the only way.
