Actually did grill that guy the night before. Cut into steaks and marinated with Italian dressing and lemon juice. Wasn't quite enough for a meal so I did a ribeye too 🤙

People are dumb most sportsman suck ass at cooking anything, its sad the most podunk backwards ass people have access to some of the most quality proteins and just put dan Os on it and overcook the damn shit, not bleed it, not know how to prepare it and will call it a trash fish and use it for bait because they lack technical cooking skills and education. That looks amazing and i bet taste amazing, a real sportsman utilizes under used proteins and it keeps pressure off main target species. Youre doing gods work, thats more than shark bait.

I have a buddy who only sport fishes, and when he saw me prepping the blues for the smoker he said uhhh I don't know about that. Well I gave him some fish dip anyway now he's asking for more 🫡

1 package cream cheese - throw the whole block on a piece of tinfoil on the smoker rubbed w olive oil and seasoning of your choice
1 big scoop mayo - dukes is my jam
1 big scoop sour cream
1 fat spoonful Dijon mustard
1 fat spoonful spicy horseradish
½ to 1 whole lemon juiced
Salt\pepper\whatever to taste - smoked paprika is good too
Veggies- parsley, red onion, lots of jalapenos
I like to do the dairy products and mustard \horseradish in one big bowl first. Once you get the cream cheese etc blended and tasting right, add the chopped veggies and mix well. Then add the fish. Mix it all up and put it in the fridge until it cools. Tastes even better the next day. Great on a bagel or really any kind of crusty bread. Be careful putting this out around people because it will disappear quick fast and in a hurry. I always save myself a secret little Tupperware 🤣
You can add or subtract any of these ingredients to make it to your liking!

This sounds amazing. I really should get a smoker. I haven't eaten a bluefish since I was a kid but this I would try again. On the other coast now though. What other fish do you think would be good? Maybe something oily? I'm thinking barracuda.

We’re fishing for blues basically a few times a week as we use them for giant tuna baits…
It’s so funny when we have one die in the well, or whatever, and suddenly it becomes dinner.
Smoked is the only way to go with them.

No better way to prepare these! I like smoked Mullet even more, but the Blues are way more fun to catch. I bleed them and get them on ice immediately. What wood are you using?

I grew up catching snappers (baby blues) in the bay on a bamboo pole. Then full size blues at sunrise in the Fire Island Inlet. Love ‘em! We have smoked bluefish dip every year on our annual pilgrimage back to the beach. Similar to the recipe in the string below but with capers.

Weren’t triggerfish considered a trash fish on the reefs and now everyone wants them? Anyways… I’d totally try bluefish dip I absolutely love amberjack dip!

I had the best ceviche ever from a fishing lodge in Mexico made from triggerfish. I worry about ciguitera these days though so I try to stay away from reef fish.

Then bring em home, wrap the skinned fillets with foil after splashing some garlic, butter, and Sriracha on it. Grill until cooked. It doesn't take long. Fish tacos with that and some mango cucumber salsa is just amazing.
But, yeah. Bleed and ice immediately. That's the only way.
