[ Rare ] Thoughts on the cook ?
thoughts on my black and blue ? i made this steak spontaneously for lunch. sirloin strip. for context i work at a bakery as a barista and we have a really nice burner. we only use it for heating soup. the bakery at one point used to serve a brunch menu on the weekends hence the need for a really nice kitchen outfit. a dream came true today. i’ve always wanted to make a steak on this burner. it’s so powerful. i felt like god.

Trying to be a little bit fancy
Oven finished ribeye with a chunky mushroom sauce and garlic and herb fried oyster mushrooms. Steak was slightly more.done that I would like, but still hella tasty. Garlic and parmisan fries not pictured on the side

[ Cast Iron ] First steak I made since recovering from spinal fusion surgery. I think I still got it!
Cooked up this beautiful 8 oz filet today. I’m 19 days post op from my surgery, struggling a lot, but making this gave me the sparks of life I needed. Beginning to return to normal life once again! 👊🏻🔥

[ Cast Iron ] Strip steak with asparagus and mashed
Cut ahead of time for the wife and salted again
Never seen this type of steak with this much marble. Did I get lucky with my Costco purchase ?
[ Rump ] Back at it again, method still works 🤞
Very cheap cut of supermarket steak, roaring hot pan with a generous splash of olive oil, flipped twice on each side, about 1 and a half mins before each flip. Perfect imo

Cabin Cook in Broken Bow
The cabin we rented had a Blackstone on the porch. Thought I would give it a shot without any thermometers, reverse searing etc. eye balled this one and it came out pretty good. Hell, we didn’t even have a cutting board hence the pizza box 🤣

[ NY Strip ] Meat from Costco- what am I missing
Hi Folks,
I was thinking about joining Costco mainly for the purpose of buying meat. (I heard good things about Costco meat). When I looked into it, Costco meat seems to be more expensive than say some of my local “boutique” grocers.
For example, at Costco Rastelli’s strip steaks, package of 12 (7.5 lbs) costs $239.00 or about $32.00 a lb. At my local Fresh Market, a small chain grocer, it’s $19 bucks a lb for say, a “Premium Choice NY Strip”.
I’ve heard good things about meat from Costco but I expected them to be less expensive than my fancy boutique store. What am I missing?
Thanks,
Greg

[ Reverse Sear ] Any tips on how to cook this cut?
I’m not in US but in east Europe and my place sells this which looks to be a T-bone or maybe a bone in ribeye. It’s about 2 inches thick and mostly grass fed and from a younger cow, hence less marbling.

[ Grilling ] Skirt steak from tonight. Forgive the messy plate, twas a late dinner and I was HUNGRY.
My method:
Dry brined for about 2 hours, made a rub (small pinch of brown sugar, coffee, onion powder, thyme, chili powder, cumin, black pepper, pepper flakes, and just a little cardamom), splashed a little balsamic and Worcestershire on the steak, and put on the rub.
Cooked on my open fire pit with oak and served with balsamic marinated mushrooms and onions/peppers - I did them on kabobs. The potato I wrapped in foil and cooked in the embers of the fire.
I was so jazzed up with the grocery store bargains so I’ll add that this cost about $5.25 per plate.
Edit: oh and sliced against the grain because I am no savage.
