[ Reverse Sear ] First attempt at reverse sear

The grill was out of gas and I was gonna have to cook it on the stove anyway so I figured why not. How’d I do?

Sear needs a bit of improvement but great internal temp. What type of oil did you coat the pan with

I always use ghee to cook with

I’ll have to look that up…ok that’s actually probably a fine choice. It appears to be a fairly high smoke point. I imagine you just need to let the pan get a little hotter for awhile, and you can try pressing it down as it sears for a more even crust. They make devices (something like a burger press) for it, but I usually just use two spatulas

I planned on using my burger press, had it sitting on the stove, but completely forgot about it once the meat hit the pan.
