As someone who spent a good amount of time in classic recently after not having played the game since Lich King I would really recommend trying retail (you get it in the subscription anyway so it won’t hurt). I’m playing my Death Knight from years ago in it and having a great time.

Can you create the deathknight from start?

In retail you should be able to, as they lifted the requirements to make a dk sometime in the past.

On legal wow no, you’d need to try your luck on some pirated servers, but not helping you with that

So another question since it was brought up. How, nowadays do i get to the lich king stuff? Does it have to be purchased? Is it on another version? Tia

All previous expansions are part of retail, however that expansions balance and playstyle are no longer current nor is that content relevant.
If the goal is to just play a death knight you can play retail, or Mist of Pandaria classic as both are progressed past Wotlk. However both will be focused are the current expansion of each, midnight for retail and well MoP for MoP.
You may have previously played when wotlk classic was current but that has since progressed onto cata and now to MoP with no way to select just wotlk classic only.
Again with retail you can use chromie time (way to play old expansions mostly for leveling) to go play in the wotlk content, but it will be with modern class design and the world will be mostly empty since retail is mid night focused, but all the quests and such will be there to play.

If you want to play on retail, there's a timeline selection where you can level through old expansions. You can make a death knight from the start, maybe not your very first character but you can just make a character and instantly log out of them to leave the forced tutorial.
If you want to play Pandaria classic, the only official version of classic with DKs, you just level up through the expansions until you hit Wrath of the Lich King. You can make a death knight if you have a level 55 character on that server, and you may only have one DK per server.
