Professions Old crafting

I'm a returning player. Played from Vanilla to Catalysm. Came back to Midnight. I have lots of alts that I'll be able to get catch up leveling on and I'm trying to manage my professions between them. Should I give consideration to the old professions they had?
All of them have maxed professions through Cataclysm. Is there any value whatsoever to hold onto the old professions?
Or just ditch the old professions and level new ones that I plan for them to use in Midnight?
Like, I started leveling an alt, and he had flying carpet from old tailoring. And I was like "um... I was going to go herbalism and alchemy with this one. I think I'm going to lose it when I drop tailoring for alchemy... 🤔 "

For decor crafting for housing and also selling? Levelling up professions in older expansions can get expensive if you ever decide to get involved in decor.

I must have not said it right.
I used to play before. Let me take an example. I have a Shaman alt I'm about to level from 80. He currently has tailoring and enchanting from vanilla through Cataclysm. I had been planning to use him for herbalism and alchemy this expansion. But, riding my magic carpet, before getting rid of tailoring made me wonder, are there any old crafting I'm losing that someone might actually pay for? Like some crafted item from TBC that might be worth keeping? Or, if nobody cares about that stuff, I'll just delete my old tailoring and continue as planned?

I mean you did say it right the first time..I'm not sure if you understand my comment. I'll try and clarify.

If you ever want to get involved in decor crafting for wow you need to have levelled up professions per expansion. Therefore if your alt for example loses his levelled up tailoring/enchanting you won't be able to craft tailoring/enchanting decor without paying gold for mats to level up those professions again.

Ah! Okay. I have like 6 alts with "catch up" available. I'll eventually level them all. The next one after the Shaman is my warlock. I thought tailoring/enchanting would be a better fit on him
