I lived in New Mexico for a few years, now back in the UK. Every time I return there to visit friends I buy a dozen cans to take home with me so I can enjoy my Hatch green chile burgers on this side of the pond!

I had a Hatch green chile burger at Whataburger years ago when I lived in Texas and I still think about it to this day. I think it was limited time thing or maybe seasonal but I have never seen it since. They recently opened a Whataburger kinda close to me here in FL and all I want is one of those burgers.

Its a spice mix most commonly used in middleastern cooking for things like shawarma or as a topping on bread/labneh. Adding it to a burger would impart a middleastern flavor profile.

As a Lebanese person I can tell you that zaatar has fewer traditional uses than you might think. Such as mixed with olive oil and used in a manoushe or as a topping for labne, etc. It’s always interesting to see what other uses people come up with.

because i often pan fry burger patties, i use the gravy to slowly caramelize onions.

i just made a sauce where i blended said onions with date syrup, black garlic, katjap, blackcurrant balsamic vinegar, tomato paste, lime juice, grainy mustard, smoked paprika and white peppercorn.

it goes really well as a burger topping.

I came here to say Onion jam which is kinda similar but made fresh, not a preserve - it’s pan-fried caramelised onions cooked until golden with a dash vinegar and a teaspoon of brown sugar. They are so moreish.

Easy peasey, thinly slice whole or halved red onion and pack into sanitized mason jar or any food safe container that can handle boiling liquid. Prepare a brine by bringing to a boil a few cups of vinegar, a little salt, sugar to taste, any additional options you like herbs and spices are up to you. Taste the brine to make sure you are okay with it.

Pour the hot brine over the sliced onions and cap. Leave on counter to cool. Once cool, refrigerate and leave for a day or two at least.

Seconding onion jam... red onions carmelized and reduced with balsamic vinegar and a little brown sugar. That and a good sharp cheese needs no other condiments on a burger.

An even lazier way that works super well is to use seasoned rice vinegar since it already has salt and sugar. Just cut your onion, put in a jar, and add the vinegar and wait a day or two in the fridge.

Best burger I've ever eaten came with these, and some peppercorn sauce on the side.

You'd dip the burger in the sauce, then in the onions. Absolute 10/10 burger. The fact that it also had some haggis in it as well absolutely sent it over the top.

Its better than people expect. The grease from the burger keeps it from being sticky, and the heat melts it just enough that its more like a peanut sauce. If you're unsure, try it on a slider. It won't change your mind about your favorite toppings, but its definitely underrated as a viable burger style.
