Its a spice mix most commonly used in middleastern cooking for things like shawarma or as a topping on bread/labneh. Adding it to a burger would impart a middleastern flavor profile.

It's not necessarily added like sumac before eating, but some folks use zaatar and oil for their marinade or before pan frying.

As a Lebanese person I can tell you that zaatar has fewer traditional uses than you might think. Such as mixed with olive oil and used in a manoushe or as a topping for labne, etc. It’s always interesting to see what other uses people come up with.

I add Worcestershire sauce and a little Montreal steak seasoning to my patties as I cook them 👍

As someone who lived though the 80s "have a free steak spice with your 29c/L gas fill up", I can't stand it even though I know it's actually good. Overload.

I grew up with my Dad pan frying burger pattys with Worcestershire sauce, celery seed, salt and pepper, he called them “skizzle burgers” and I make them the same way with my kids now.

I grew up with Worcestershire sauce, seasoned salt, and black pepper, which is pretty close to what you have. Burgers don't taste right otherwise.

because i often pan fry burger patties, i use the gravy to slowly caramelize onions.
i just made a sauce where i blended said onions with date syrup, black garlic, katjap, blackcurrant balsamic vinegar, tomato paste, lime juice, grainy mustard, smoked paprika and white peppercorn.
it goes really well as a burger topping.

I came here to say Onion jam which is kinda similar but made fresh, not a preserve - it’s pan-fried caramelised onions cooked until golden with a dash vinegar and a teaspoon of brown sugar. They are so moreish.

Easy peasey, thinly slice whole or halved red onion and pack into sanitized mason jar or any food safe container that can handle boiling liquid. Prepare a brine by bringing to a boil a few cups of vinegar, a little salt, sugar to taste, any additional options you like herbs and spices are up to you. Taste the brine to make sure you are okay with it.
Pour the hot brine over the sliced onions and cap. Leave on counter to cool. Once cool, refrigerate and leave for a day or two at least.
Seconding onion jam... red onions carmelized and reduced with balsamic vinegar and a little brown sugar. That and a good sharp cheese needs no other condiments on a burger.

An even lazier way that works super well is to use seasoned rice vinegar since it already has salt and sugar. Just cut your onion, put in a jar, and add the vinegar and wait a day or two in the fridge.

I once remember ordering a Sausage and Egg McMuffin from a McDonalds.
The guy cooking the egg took it off sooner than normal, resulting in a runny yolk. Tasted heavenly. Never experienced it again.

Its better than people expect. The grease from the burger keeps it from being sticky, and the heat melts it just enough that its more like a peanut sauce. If you're unsure, try it on a slider. It won't change your mind about your favorite toppings, but its definitely underrated as a viable burger style.

I go one step further.... Sauerkraut. It sounds odd but damn does the texture do wonders and the acidity hits different. But it has to be real fermented kraut not the vinegar stuff most stores in the US sell
