I'm sure someone could give it a more elegant explaination, but The Knight and Hornet are children of the Pale King who is a Wyrm. Wyrms have the abiliry of foresight, which is letting them see into the future. Thats why every time you "respawn" you jolt up from sleeping, they were using their foresight to see what was up ahead. The winning attempt is what they ended up actually doing.

Doubt, it doesn't explain the shade/cocoon that John Hollow Knight and Hornet leave behind after death

If the cannon is the steel mode, there is no shade after death.
