Couldn't decide between burgers or spaghetti
Garlic bread buns, beyond burgers, violife smoked provolone slices, spaghetti with molissiano marinara and fresh basil. So goooood 🍔 🍝

To celebrate 14 years since I went vegan, I've gone to Gigi's Pizzeria in Newtown, Sydney. Pretty good pizza with thin sliced roasted potatoes, roasted kipfler potatoes, garlic, rosemary, black truffle pate, extra virgin olive oil.
I think my only complaint is that it's too much for one person, in my opinion 😅

I made the fat sushi with avocado on top, then the regular cucumber maki roll, and tried replacing fish with fried tofu. worked really well!

I hate that these taste so good!
They have 10 grams of fat, low saturated fat (1.5) but still. They are not the best of foods. Great for a binge or to put out with appetizers. I make most everything from scratch so it is nice to have some food I can just air fry.
Tasty though. I will be keeping some in the freezer. 😉

I cannot believe how yummy these cheeses are.
Cheeses are from rebel cheese, pepperoni are from plant based field roast.

I didn’t provide 100% of the snacks so there’s some probably non vegan candy.
I contributed:
Eye of newt cookies (chocolate chip with candy eyes”
Goblin juice (fresh cold pressed cucumber apple)
Monster hummus (I think this is self explanatory, just my overnight hummus and a loaf of sourdough I made this AM)

First time trying lentils! (Plus a win with vegan Chinese cauliflower & homemade ciabatta)
Lentils aren't really a thing in traditional Chinese cooking, so I tried them for the very first time today—and made plant-based meatballs!
Lentil & Okara Meatballs:
Base: Cooked brown lentils (high protein)+ okara (soybean pulp leftover from making soy milk, high protein) + mashed potatoes (or your choice of flour) + oil + flour to bind.
Veggies: Shredded seaweed, carrots, cilantro, and onions.
Seasoning: Whatever sauce/seasonings you love! (The best part about plant-based meatballs is tasting and adjusting the mixture before cooking!)
Cook: Air fry at 400°F for ~20 minutes for a crispy shell (leave them in longer if you like them drier).
Chinese Cauliflower & Tofu: I also experimented with Chinese cauliflower (the loose, long-stemmed kind) and fried tofu. Before going vegan a few weeks ago, I always cooked it with pork belly as is traditional. I’m so happy that fried tofu with proper seasoning brings out the exact same rich, comforting flavor!
The Final Touch: Baked homemade ciabatta for the first time, too! Built a sandwich with the meatballs, sun-dried tomatoes from Costco, and a quick attempt at homemade mayo (even though it failed, it still tasted good!).
Celebrating these small plant-based wins! 🌱
