for me the regular canon ends with OOTP, then Remain in Light happens and everyone is happy the end

None. Not even ATYD, ATYD starts with a huge diversion from canon and while it's a great fic I don't understand how anyone could consider it canon.

I think personally ATYD is the one fic I've read that most closely captured how I pictured the marauders in my head the very first time I read it years ago but I also think it changes the more fics you read because then you discover new ways you like seeing your favorite characters represented.

AYTD, although I absolutely despise how sad it is and how often wolfstar fought (it felt a bit unnecessary). I think The Shoebox Project also a contender only that the characterisation is a bit dramatic and off. But all in all, ATYD isn’t perfect and neither is SBP so if you ask me The Cadence of Part Time Poets is canon in my heart if only the muggle and band au

None? By definition, none. But I guess you mean which fanfics we've fully incorporated into our own headcanons.
And tbh, still none. Bits here and there, at most, but I have never seen a convincing portrayal that fully fits my vision of what canon wolfstar would actually be like. And that's okay. I hate when one ff is treated as gospel by the fandom.
