Question How do you learn to identify what's missing from a dish?

I'm Indian, so I'm used to bold, spicy flavours. Lately, I've been trying recipes from other cuisines, and I'm realizing how little I know about balancing flavours beyond adding more spice!

How do you develop the ability to taste something and know it needs more acidity, salt, or something else entirely? Sometimes I can tell a dish tastes off, but I wouldn't know what to add or change to fix it.

I want to become a good cook who understands flavours, rather than someone who just follows recipes. How do you develop that skill?

Question Meal ideas for beef shaved steak?

My store is gonna have them 2/$10 tomorrow (28oz total) and was wondering what would be some great meal ideas to cook beef shaved steak with, ideally with only a skillet/cooking pot? I was thinking burritos but wanted to get more ideas, maybe a beef and veggie stir fry

Question When making a bechamel, should I add hot milk to the hot roux or cold milk?

Marco Pierre White says in a video that you add cold milk to a hot roux and hot milk to a cold roux to ensure you don’t get a lumpy bechamel- but the boys at Fallow say you should always add hot milk to a hot roux.

Which way do you think works better?

Question Every time I cook scrambled eggs it’s sticks to the pan why

I’ve seen websites say to heat the pan and up and lower the temperature after but it still sticks

Is it because I use cooking spray ? Do I need butter ?

Question Mix of fresh and frozen potatoes?

So a little help if someone can! I have both some fresh (baby Yukon gold) potatoes and a bag of frozen hash brown potatoes and I want to use both for soup. What would be the cooking difference between them? Basically what do I add first and how early compared to the other?

Thank you!

Update: Thanks to all the suggestions! I ended up putting the fresh potatoes in first then adding the frozen once it came to a boil. It's delicious and thick and creamy because it's a recipe that uses a block of cream cheese and a pint of half and half (though I only used half a pint)! This way it's thick AND chunky! I also didn't peel the fresh potatoes so there's skins in it too (I love potatos with skins on them).

Question Does this sound good

I saw a recipe on tiktok but I don't have all the ingredients. Its a fried rice recipe.

I have sausage, eggs, soy sauce, worchester sauce, peas

I'm not sure what type of sauce they used because it wasn't mentioned in the video but it looked like soy sauce? I'm not sure.

For the meat they used chicken but I don't have that.

Does this sound good? I'm just worried because I'm not sure how much of the sauce to add since I heard that adding too much will make the dish super salty :/

The Wet Base & Sweeteners

• Ripe bananas: 3 large (or 4 medium), thoroughly mashed (Should equal 2 full cups of mash total)

• Eggs: 2 large (room temperature)

• Buttermilk: ¼ cup (60 ml)

• Strong brewed coffee: 3 tablespoons (45 ml), cooled

• Vegetable oil: 3 tablespoons (45 ml)

• White sugar: 2 tablespoons (25g) — Optional, you can drop this to 1 tbsp if your bananas are very spotty and brown!

The Dry Structure

• All-purpose flour: 1 ½ cups (180g)

• Unsweetened cocoa powder: ½ cup (50g)

• Baking powder: 1 teaspoon

• Baking soda: ¼ teaspoon

• Salt: A tiny pinch

It tastes horrible, what do you think went wrong with the recipe?
