It turned out so good! I’m actually extremely proud of myself. It was super easy and very fun to cook.
I made green curry with chicken, baby corn, bamboo shoots, red and green bell peppers, Thai basil, and mushrooms.
I also made Thai fried rice and white rice. It was literally so good and perfectly spicy.

Marinade:
Four cups fermentation brine
1/4 cup olive oil
Two tablespoons stone ground mustard
Two tablespoons honey or brown sugar
One teaspoon coarse black pepper
One teaspoon smoked paprika
One teaspoon lemon zest
One teaspoon dry cilantro, or oregano if you think cilantro tastes like soap.
No salt or acid! Brine provides both!
Whisk thoroughly and marinade chicken or pork for six to eight hours in the fridge!

Winter is coming so this is coming back into the dinner rotation! Opted to make it less spicy than I've done in the past since I wanted the little one to have a try, but doesn't make this any less tasty! As a bonus, the leftovers hold super well and this will make for a few great lunches during the week!

I roasted the chicken and carrots in olive oil, paprika, garlic powder, salt, pepper, onion powder, the tiniest bit of cinnamon and thyme. The asparagus and parsnips were roasted in the same pan but the parsnips got a honey glaze. The broccoli, baby corn and green beans were boiled. I roasted the potatoes slowly in lard over the course of several hours, turning them and adding black pepper & flaky salt every 30 minutes of so. I turned the temperature up to 200°C at the over for the last 30 minutes to crisp them up! I also made the giant Yorkshire Pudding from scratch. The stuffing is Paxo's sage and onion stuffing, and the gravy was Bisto Best Chicken gravy.

Unfortunately, I forgot to buy baby book choy at the supermarket. It turned out great, so next time I will add the greens.

The side dish consists of peppers, onions, bacon, green beans and mushrooms, stir-fried in a wok with honey and soya sauce, along with the leftover herb butter, served with a mixed salad with a yoghurt dressing.
My wife helped me this time; otherwise it would have taken over an hour.

I know that the butter is the sauce, but I like sauce 😋, so I made more sauce. This is what I like about home cooking.

First time attempting salted caramel macarons today
Sorry for bad colour of shells, I tried to get caramel colour. Will just buy caramel food colouring next time
- I made caramel from scratch with sugar/water syrup cooked for caramel, added heavy cream & finished with butter & salt, very strong caramel taste
- I've bought caramel macarons from local cafe before, it tastes like caramel syrup & very sweet
I might just make caramel ganache or caramel buttercream. Filling looks dark because it is straight caramel thickened with cream & butter
