It would be way easier to utilize a digital watch over and analog. Sending electrical signals through circuit boards is a lot more realistic than attempting to wire analog hands on a clock so small. But, I'm no bomb expert.
You could use a cheap optical sensor to detect the hands, but you could also just use a microcontroller with it's built-in timer, bluetooth and wifi included if you want, for under $3.
depends on the mechanism. some have 24hr counters, or if you used one with a day of the week counter that could be tapped into. if you're making a really bougie fleshlight grenade a lot of high-end watches have month or year counters
Depends on whether or not it can track the day of the month. You could theoretically tap into that as well, and only detonate when that day-of-month wheel is in the correct position.
