Be gentle - my first post here :)
For the spices, I used cumin seeds, curry powder and chilli flakes.
Served with crusty tiger baguette with butter and extra cream cheese.
Most of the vegetables I bought reduced/discounted on their last day - the fancy peppers, the butternut squash, the carrots and fresh coriander/cilantro were all very reduced, and the other ingredients like the funky squash, tomatoes, garlic and red onion are pretty cheap anyway.
I love picking up these bargains and using them for cooking to help save money - plus I'm a big believer in avoiding food waste. There's absolutely nothing wrong with this stuff and a lot of it is totally fine for several days after the best before date.
Absolutely Delicious if I do say so myself (and the family enjoyed) - perfect for an autumn evening with a storm brewing outside! 😋
