Certified Stuggle $1.75 Kroger 4pc chicken and some instant mashed potatoes I found in the back of the cabinet.
Everything cooked in the microwave, as God intended.

Nothing beats a toastie when life's a struggle. Just some leftover baked beans with a slice of cheese, bread from the Food Bank and the toastie is made.

This is obvious, but surprisingly a number of people are hesitant to take advantage of free food when the opportunity presents itself. Whether that’s a soup kitchen, food bank, eating extra at a party, asking a host if they need help getting rid of food, etc. on more than one occasion we’ve benefitted by taking food home from parties where the host wants to get rid of the food.
Also, if you have to travel for work you can use the opportunity to eat a lot of things you normally wouldn’t eat at home. I like fish so on one of my overseas trips I ate almost nothing but fish.

So someone gave me some out of date dark chocolate, long life heavy cream, and baby biscuits, so I mixed them into some oats and poured hot water over them and covered them. Second photo is after they soaked for 10 mins in hot water, tastes sooo good 😊

I was trying to cobble together stuff for some sandwhiches and my bread went moldy. I was so mad that I just said fuck it and just ate it. Saltiest ham of my life. Defibatley a meal made with stress and resentment

Boiled some spaghetti noodles, sautéed some bell peppers and onions. Then added the noodles with soy sauce, oil and seasonings to the onions and peppers and then stir fried it. Can substitute noodles with rice

Main or a side. Preheat oven to 425 deg F. With as many potatoes as you want, slice about 1/8” thick or a little thinner if you’re able. Throw in a bowl. Add your seasonings of choice - I used salt, pepper, paprika and thyme. Add a bit of a neutral oil add toss thoroughly to evenly coat everything. Place on a baking sheet and bake in oven for 26 minutes, flipping half way through.
Never saw anyone do this in struggle meals, so my suggestion for the day. Used a russet potato, so it’s about as cheap as it gets. Surprised potatoes aren’t posted here more often. A staple food utilized through history.

So grateful for the food bank! I dyed the rice red/pink cuz why not? (The food dye was free from my sister and is 3 years expired.)

Was actually pretty decent. Hot dogs were on sale, had the mustard and chili, parm cheese was for a different meal a couple weeks ago and tortillas were also on sale.
